Catering, Food Wagon Has Helped Bristol BBQ Business Expand

In the year since Chuck’s BBQ opened in its street-front location on Pond Street at the base of the Mill Street Parking Lot, the eatery has grown its business through its catering services and mobile food wagon.

Last Thursday, Chase and Colleen Guernsey and Chris Schmitt reopened their several-hundred-square-foot BBQ joint for the public. They were quick to point out that the location’s closure over the winter doesn’t mean the crew has been relaxing.

Since they opened last year, Chuck’s BBQ has been expanding their catering business. And they don’t just offer BBQ options, Colleen Guernsey said, pointing to the holiday parties and wedding they have catered.

“We even catered a vegan wedding,” she said.

With the addition to their tricked out food wagon, the business has also expanded by offering to come to events to serve up their Texas-style BBQ. So far, Colleen Guernsey said, the truck has visited a number of events and concerts. Currently, the wagon is booking up quickly.

Part of Chuck’s BBQ’s business model is based around giving back to the community. The eatery, according to Colleen Guernsey, has participated in a number of charitable efforts, including school fundraisers.

Chase, a Texas native and former U.S. Navy submariner, and Bucks County-native Colleen Guernsey met while working in the Texas restaurant scene and moved to the area a few years ago. Chase Guernsey, better known as Chuck, attended Le Cordon Bleu Institute of Culinary Arts in Austin and the Culinary Institute of America.

Schmitt has known the Guernseys for years. He is a graduate of the Restaurant School and has worked at The Lemont in Pittsburgh and the popular Churchville Inn in Upper Southampton.
